Bolting is a sudden and premature shift to stem elongation before the root has thickened properly. Bolting often occurs if temperature is too low, especially when carrots are grown under subtropical winter conditions. Carrots are very prone to bolting at the 5 to 8-leaf stage, whereas the risk is much smaller at the 3 to 4-laf stage and after the 8-leaf stage.
